Fig and Walnut Pancakes Recipe

Ingredients:

  • 1 cup (6 oz) coarsely chopped figs
  • 1 tsp salt
  • 1 cup coarsely chopped walnuts
  • 1 tbsp baking powder
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 2 eggs
  • 1 cup milk
  • 1 tbsp oil
  • 1 tsp vanilla
  • 1 tsp nutmeg

Mix together figs, nuts and dry ingredients. In separate bowl beat together eggs, milk, oil and vanilla. Mix and blend all ingredients. To make pancakes use 1/3 cup for each one. Bake as usual. Serve hot.

Yield: 12 servings
