Blackberry SaladSouth Carolina Department of Agriculture
Ingredients:
- 2 (3 ounce) packages of black- raspberry flavored gelatin
- 2 c boiling water
- 1 c cold water
- 1 c fresh blackberries
- 1 c chopped pecans
- 1 envelope whipped topping mix
- 1 (8 ounce) package cream cheese, softened
- 1 c sugar
Dissolve gelatin in boiling water; stir in cold water.
Chill until consistency of an unbeaten egg white.
Fold in berries and nuts.
Pour into a 9-inch square dish; chill until set.
Prepare whipped topping mix according to package direction; add cream cheese and sugar, blending until smooth.
Spread over gelatin layer.
Chill several hours.
Yield: 9 serving
