Blackberry Chantilly
Ingredients:
- 1 cup of crushed fresh blackberries
- ½ cup of sugar
- 1 cup of whipping cream
- 2 tablespoons of blackberry schnapps
- ½ teaspoon of vanilla extract
- 1 10.5 ounce angel food cake
Procedure:
Stir together blackberries and 1/3 cup of sugar; let mixture stand stirring occasionally.
Beat whipping cream at medium speed with an electric mixer until foamy; gradually add remaining sugar, schnapps if desired, and vanilla beating till soft peaks form.
Fold into berry mixture.
Serve over angel food cake.
Yield: about 8 servings taking about 20 minutes to prepare.
