Fig Jam

Cut figs in half or quarters. Cover with sugar in a bowl/sauce pan and put in refrigerator over night. Place on stove and at lowest possible heat setting. This low heat setting is important as fig will burn if heat is to high. Cook for several hours adding either lemon juice or bits of lemon to taste. skim any undesired scum. Put in glass container and decorate with your name and naturally preserved Fig jam.
