How to Freeze Figs?

The way we freeze figs is just to put them into plastic freezer bags and straight into the freezer. Others have told us they dip the fig in sugar first, then dry them some to reduce the juiciness before they freeze them. Still others have told us they dry them to the slightly chewy point after dipping in sugar. The dipping in sugar helps retard fungal growth during the drying process, which is especially important if drying is being done at ambient temperatures. If the figs are not damp or sticky when you want to dip them in sugar, dip in water first then in sugar so the sugar will stick.
